Two Good Things: Kale Slaw and Something with Eggs

Tonight we had leftover slaw from last night. You know that slaws are better the-day-after, right? It’s mid-March and time for bitter greens. Fortunately for us, my husband planted kale, collards and other greens in the garden last fall. They are growing now. Tonight we also had…I dunno. I sauteed some onion and garlic in EVOO, added a few sliced peppers and cooked all of that til it was soft. Then I topped it all off with clean, sliced potatoes and a jug of crushed tomatoes and let it simmer til the potatoes were done. Then I made four little holes in the pan and broke four eggs into those, topped the eggs with a pat of butter, salt and pepper and put the lid back on. When the eggs were done, we ate.

Except for the Citrus-Maple Kale Slaw:

1 qt of dark greens, chiffonade or slice really thinly
2 meyer lemons, peeled and segmented
2 mandarin oranges or clementines, peeled and segmented
2-3 lemons, juiced (roll them under your palm until soft, cut in half, squeeze the juice into a bowl, discard seeds)
about as much maple syrup as lemon juice
Mix it all up in a bowl and allow to sit for an hour or day. Refrigerate if it’s going to be more than an hour.

And the Egg/Tomato Wok
Dice 1 onion and saute in EVOO til it begins to soften.
Add 3 cloves garlic, diced and 3 small, thin-walled peppers, saute until soft.
Top with 4 cups peeled and thickly sliced (1/4-1/2″ thick) potatoes and
1 box/can of crushed tomatoes
salt and pepper as you see fit
Simmer until the potatoes are soft. Use a large spoon to make 4 (more or less, depending on how many eggs your family will eat) wells in the simmering tomato-potato mixture. Crack eggs into the wells and top each egg with a pat of butter, salt and pepper. Put the pot lid on and simmer on low until eggs set.
Serve with a little grated cheese if you like.

Sorry about the lack of pictures but it was good. We ate it. (Mostly I blog recipes because I like what I made and want to remember what it was. I rarely use recipes, except for hummus, and for when I want to redo something that was a big hit.)
